Identification and characterization of shrimp allergens in Korea

Abstract

Shrimp is considered one of the major food allergen in Korea. Physiochemical characteristics of major allergen in shrimp are varing between species of shrimp. We purified shrimp allergens which distributed in Korea by use of SDS-PAGE and IgE immunoblotting. The results were as follows: Although the four major shrimps which distributed in Korea, Penaeus chinensis, Metapenaeus joyneri, Trachypenaeus curvirostris and Leptochela glacilis showed species specific protein band, 36kD protein band revealed the most prominant one in all four shrimps. Thirty six kD protein band in Trachypenaeus reacted with monoclonal antibody specific for Penaeus aztecus suggested that Trachypenaeus curvirostris cross reacted with Penaeus aztecus.
